SAKURA - BLEND
Sakura is the dark roast of our new Co-Ferment Trio.
Sakura is a blend of two very different dark roasted Colombian coffee, a traditional washed Castillo with an advanced processed Caturra. This coffee has intense notes of black cherry that are balanced by more mellow dark chocolate roast notes and a depth of body. Secondary notes of cola, raspberry jam, and basil are all present, and do add a sparkling and nuanced quality to what is an otherwise one-note coffee.
While this coffee is dark roast, do not let that dissuade you from trying it on filter. There is plenty of juice and and acidity present to make an enjoyable pour-over or aeropress.
On espresso, we recommend a more traditional ratio, closer to 1:2 coffee to water, and if possible a lower brew temp.
