APPLE CRUMBLE
Some coffees are subtle, complex and hard to pin down, while others are very much on the nose, Apple crumble is firmly situated in the latter category. This triple (co) fermented, carbonic honey process coffee by Edwin Noreña is more just a mouthful to say, it's also one of the loudest and most vivid expressions of green apple.
In the cup you can find equal parts syrupy and sparkling green apple, green jolly rancher, and a slight booziness funk in the finish. This coffee shines more as a lighter filter brew, while on espresso you can expect a lip-puckering experience that is best cut with some milk.
This coffee is as much an agricultural project as it is a science experiment. The specific process used is called Mossto fermentation, a multi fermenation process wherein mossto (similar to the must produced in wine making from smashing the grapes and skins) is produced and fermented with the beans. This results in a tart, sparkling sweet, and distinctly green apple tasting coffee.
